Beef Broccoli Stir Fry

Tender beef strips, fresh broccoli, and an amazing sauce: even my 7 year old niece loves this recipe!

Ingredients:

  • 2 Tablespoons Cornstarch, divided
  • 4 Tablespoons Light Soy Sauce, divided
  • 1 Tablespoon Rice Wine Vinegar
  • 1 Pound Beef Stir Fry Strips
  • 3/4 Cup Beef Broth
  • 2 Cloves Garlic, minced
  • 1/2 Tablespoon Sesame Oil
  • 2 Teaspoons Chili Paste, or to taste
  • 2 Tablespoons Ginger, minced
  • 1 Teaspoon Sugar
  • 1 Cup Broccoli Florets, blanched
  • 1/2 Cup Scallions, cut into 1″ pieces
  • 1 Can Sliced Waterchestnuts, drained
  • 1/2 Cup Peanuts

Instructions:
1. Combine 1 tbsp. cornstarch, 2 tbsp. light soy sauce and rice wine vinegar; add beef strips.
Let stand 1 hour.
2. Meanwhile, mix together beef broth, 1 tbsp. cornstarch, garlic, 2 tbsp. light soy sauce,
sesame oil, chili paste, ginger and sugar. Set aside.
3. Heat 1 tbsp. oil in hot wok or large skillet over high heat. Add beef and stir-fry 3 minutes;
remove.
4. Heat remaining 1 tbsp. oil in same pan. Add broccoli, scallions, waterchestnuts and heat 2
minutes.
5. Add broth mixture; cook and stir until sauce boils and thickens. Add beef strips. Top with
peanuts. Serve over rice.
