Boneless Pork Chops in Crimini Wine Sauce

Crimini mushrooms and Dijon mustard make this quick to prepare dish a favorite!


  • 2 Pounds Boneless Pork Chops, trimmed and pounded to 1/4 inch thick
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Freshly Ground Black Pepper
  • 2 Tablespoons Olive Oil
  • 1 Shallot, minced
  • 1 1/2 Cups Crimini Mushrooms, sliced
  • 1/2 Cup White Wine
  • 1 Teaspoon Dijon Mustard
  • 1 Teaspoon Fresh Thyme, chopped
  • Flat Leaf Parsley, for garnish, chopped


1.Season pork chops with salt and pepper. Heat 1 teaspoon of oil in a skillet. Add the pork chops and brown on both sides until cooked through, about 4 minutes per side; until they reach 145° F. Remove from skillet, and cover.

2. Add the other teaspoon of oil to skillet. Add shallot and sauté for a minute. Add

mushrooms, white wine, mustard, and thyme. Let simmer for 5 minutes. To serve, spoon the sauce over the pork chops, and sprinkle with parsley.
