Dijon Roasted Rack of Pork

Dijon Roasted Rack of Pork 

The herb bread crumb mixture adds succulent flavor to this delicious cut of meat.


  • 1 Pork Rib Rack Roast, 3-4 pounds
  • Sea Salt
  • Freshly Ground Black Pepper
  • 1 Cup Dijon Mustard
  • 1 1/4 Cups Bread Crumbs, plain
  • 3/4 Cup Italian Parsley Leaves, minced
  • 5 Cloves Garlic, minced
  • 1 Tablespoon Dried Thyme, crumbled
  • 1 Tablespoon Dried Sage


1. Heat oven to 350°F. Season pork with salt and pepper, as desired. Brush all of pork with 1/4 cup Dijon mustard.

2. In medium bowl, combine remaining mustard with plain breadcrumbs, Italian parsley, garlic, thyme and sage.

3. Press all of mixture on top of meat.

4. In a shallow roasting pan, place crumb side up and roast 1 1/2 hours or until

thermometer inserted into center of meat reaches 140°F. Let stand covered with foil for 10 minutes.
