Feta Chickpea Salad

Feta Chickpea Salad

A delicious side dish that is great for summertime!

Ingredients:

  • 6 Ounces Herbed Feta Cheese, crumbled
  • 1 Can Chickpeas, 15 oz., drained
  • 1/2 Cup Roasted Red Peppers
  • 3 Green Onions, chopped
  • 1/4 Cup Fresh Dill, chopped
  • 1 Lemon, juiced
  • 1 Teaspoon Honey
  • 1 Teaspoon Cumin
  • 2 Tablespoons Olive Oil

Instructions:

1. Place  the drained chickpeas in a serving dish.

2. Slice the roasted red peppers into thin strips and mix with the chickpeas.

3. Whisk the lemon juice, honey, cumin and oil.

4. Add dressing to the salad.

5. Add the feta cheese and green onions. Sprinkle with dill.
