Hazelnut Crusted Salmon

Rich salmon and toasty hazelnuts are classic Northwest flavors, and fresh herbs and orange zest make this variation a real treat. Remember the pinot noir!


  • 1/2 Cup Mayonnaise
  • 2 Teaspoons Fresh Tarragon, chopped
  • 1/2 Orange, zested
  • 1 Clove Garlic, chopped
  • 1/2 Teaspoon Cayenne Pepper
  • Pinch Sea Salt
  • 1 1/2 Pounds Salmon Fillets, cut into 4 pieces
  • 1/2 Cup Hazelnuts, chopped
  • Freshly Ground Black Pepper, to taste


1.  Preheat oven to 400°F. Mix mayonnaise with tarragon, 1/2 of the orange zest, garlic, cayenne pepper and salt.

2.  Top salmon with mayonnaise mixture. Roll top of fish in chopped hazelnuts. Arrange on a prepared baking sheet.

3.  Bake 15 minutes or until fish flakes easily with a fork. Serve with remaining orange zest and fresh cracked pepper.
