Mango Mahi Mahi With Brown Rice

Flavors of lime, ginger and mango make this simple recipe spectacular!


  • 1 Teaspoon Rice Wine Vinegar
  • 1 Tablespoon Olive Oil, plus 1/4 cup, divided
  • 1 Tablespoon Honey
  • 1 Lime, juiced
  • Salt and Freshly Ground Pepper
  • 1 Large Mango, finely diced
  • 1 Tablespoon Cilantro Leaves, chopped
  • 1 Clove Garlic, quartered
  • 1 Teaspoon Fresh Ginger, chopped
  • 4 Mahi Mahi Fillets
  • 2 Scallions, chopped
  • 2 Cups Brown Rice, cooked


1. In a bowl, whisk together vinegar, 1 tbsp. olive oil, honey, lime juice, salt and pepper. Stir in mango, cilantro, garlic and ginger. Set aside.

2. Heat a large skillet over medium-high heat.

3. Brush the mahi mahi fillets with the remaining oil, salt and pepper. Sear in the skillet for 3-4 minutes. Flip and cook on the other side for another 3-4 minutes.

4. Stir scallions into brown rice. Top with mahi mahi and top with mango salsa
