Oyster Poor Boys

This New Orleans favorite is balanced with crisp lettuce, French bread and

juicy little oysters! What a treat!


  • 1/4 Cup Yellow Corn Meal
  • 1/4 Cup Dry Breadcrumbs
  • 1/4 Teaspoon Salt
  • 1/2 Teaspoon Cayenne Pepper
  • 1/2 Teaspoon Freshly Ground Black Pepper
  • 2 Tablespoons Buttermilk
  • 1 Egg White
  • 2 Containers Oysters, drained, 10 ounces each
  • 1/2 Cup Vegetable Oil
  • 1 Loaf French Bread
  • 2 Cups Iceberg Lettuce, shredded
  • 1 Cup Fresh Tomato, diced
  • 1/3 Cup Mayonnaise
  • 1 Teaspoon hot sauce
  • 1 Teaspoon Fresh Lemon Juice


1. Combine cornmeal, breadcrumbs, salt, cayenne and black pepper in a bowl; stir well. Place on a pie plate. Combine buttermilk and egg white in a pie plate; stir well. Dip oysters in buttermilk mixture, then dredge in cornmeal mixture.

2. Add vegetable oil into a large skillet. Place over medium heat until hot. Add oysters and cook 3 minutes on each side or until browned.

3. Prepare Spicy Mayonnaise by adding mayonnaise, lemon juice and hot sauce. Cut bread loaf in half horizontally, and spread Spicy Mayonnaise evenly over bread. Add lettuce and tomato, top with oysters. Slice and serve immediately.
