Panko Crusted Pollack Sandwiches
Whether you’re serving fish sandwiches, fish sticks, or an elegant fish dinner, this versatile recipe will serve you well! The bonus is that it’s baked!
Ingredients:
1 1/2 Pounds Pollock Fillets, cut into strips
1 Large Egg, beaten
Sea Salt
Freshly Ground Black Pepper
2 Cups Panko Breadcrumbs
1 1/2 Tablespoons Old Bay Seasoning
2 Tablespoons Olive Oil
Olive Oil Spray
Tartar Sauce
Lettuce
Buns
Instructions:
1. Preheat oven to 450° F. Place beaten egg into a pie plate. Season with salt and pepper.
2. In a second pie plate, mix panko, Old Bay Seasoning and olive oil. Dip pollock strips in egg, then panko, pressing to stick well. Place on aluminum foil lined baking sheet pan; coat with olive oil spray.
3. Bake 12-15 minutes. Place fish on buns and top with tartar sauce and lettuce leaf.
