Pistachio Lime Scallops

Pistachio Lime Scallops

Lime zest, chives and pistachios encrust these succulent scallops. Perfect

for an appetizer or a main course!


  • 3 Tablespoons Unsalted Butter, divided
  • 4 Tablespoons Private Selection Shelled Pistachios, finely shopped
  • 1 Pound Sea Scallops
  • 1 Tablespoon Vegetable Oil
  • 2 Tablespoons Chives, finely chopped
  • Freshly Ground Black Pepper
  • 1 Tablespoon Fresh Lime Zest, and juice


1. Heat skillet to medium heat. Melt 1 tbsp. unsalted butter and add pistachios. Sauté for 2 minutes. Remove from skillet and set aside. Add remaining butter and 1 tbsp. vegetable oil; heat. Add scallops and cook about 6 minutes or until browned and opaque, turning once. Remove scallops.

2. Meanwhile, mix chives, lime zest and pepper with pistachios. Roll hot scallops in nut mixture, squeeze lime over top and serve.
