Roasted Garlic Chicken and Brown Rice
The rosemary and fresh lemon are an amazing combo in this quick recipe! I use the frozen brown rice to make it even quicker!


  • 1 1/2 Pounds Chicken Breast, boneless, skinless, cut into large chunks
  • 4 Cloves Garlic, crushed
  • 3 Tablespoons Fresh Rosemary, chopped leaves
  • 3 Tablespoons Olive Oil
  • Lemon Zest, grated
  • 1 Tablespoon Sea Salt
  • 2 Tablespoon Freshly Ground Black Pepper
  • 1/2 Cup Chicken Broth
  • Juice of One Lemon
  • 1 Package Brown Rice

1. Preheat oven to 400°F.
Arrange chicken in a baking dish. Add garlic, rosemary, olive oil, lemon zest, salt and pepper. Toss chicken to coat. Roast for 18-20 minutes.
2. Add chicken broth and lemon juice to the dish and combine with pan juices, then spoon over chicken.
3. Return to oven and turn oven off. Let stand 5 minutes longer,
then remove chicken from the oven.
4. Serve with brown rice.
