Salmon with Cilantro Basil Pesto
Fresh cilantro, chives, basil and mint make an updated pesto that’s a perfect pairing for salmon!

Ingredients

  • 4 Salmon Fillets, 6-8 ounces each
  • 1 Package Private Selection Organic Basil, 4 ounces, leaves removed from
  • stems
  • 1 Package Private Selection Organic Cilantro, .66 ounce
  • 1 Package Private Selection Organic Mint, .66 ounce
  • 1 Package Private Selection Organic Chives, .66 ounce
  • 2 Cloves Garlic, minced
  • 1/2 Cup Walnuts
  • 1/2 Cup Parmesan Cheese, grated
  • 3/4 Cup Olive Oil, plus 1 tbsp for brushing salmon
  • 2 Teaspoons Fresh Lemon Juice
  • 1 Teaspoon Sea Salt
  • 3/4 Teaspoon Freshly Ground Black Pepper

Instructions:
1. Preheat grill.
2. In a food processor, add parsley, basil, cilantro, mint and chives. Pulse until fine,
pushing down on sides as needed. Add parmesan, garlic, pine nuts, salt and pepper.
Pulse, then add 1 1/4 cups olive oil, and lemon juice, pouring through slowly.
Combine well. Refrigerate until ready to serve.
3. Lightly brush salmon with olive oil on both sides. Place on grill, skin side up. Close
grill lid and grill for 3-4 minutes. Carefully flip and grill for another 2-3 minutes, until
internal temperature reaches 145° F. Remove and cover loosely. Top with pesto and serve.
