Shrimp Salad

Shrimp Salad

This is a great substitute for chicken or tuna salad! And the tarragon + yogurt makes it special!

Ingredients:

  • 1 Pound Shrimp Meat, cooked and drained
  • 1/2 Cup Celery, finely chopped
  • 1/2 Cup Red Pepper, diced
  • 2/3 Cup Plain Yogurt, Greek
  • 1/4 Teaspoon Cayenne Pepper
  • 2 Teaspoons Fresh Lemon Juice
  • 1 Teaspoon Fresh Tarragon, finely chopped
  • Sea Salt
  • Freshly Ground Black Pepper

Instructions:

1. Combine ingredients. Chill until ready to serve. Great for sandwich, or stuffed in a tomato or lettuce cup.
