This is a great substitute for chicken or tuna salad! And the tarragon + yogurt makes it special!
- 1 Pound Shrimp Meat, cooked and drained
- 1/2 Cup Celery, finely chopped
- 1/2 Cup Red Pepper, diced
- 2/3 Cup Plain Yogurt, Greek
- 1/4 Teaspoon Cayenne Pepper
- 2 Teaspoons Fresh Lemon Juice
- 1 Teaspoon Fresh Tarragon, finely chopped
- Sea Salt
- Freshly Ground Black Pepper
1. Combine ingredients. Chill until ready to serve. Great for sandwich, or stuffed in a tomato or lettuce cup.
