Shrimp Stuffed Haddock

  • 3 Tablespoons Olive Oil
  • 1 Stalk Celery, finely chopped
  • 3 Green Onions, finely chopped
  • 1 Clove Garlic, minced
  • 1/2 Pound Salad Shrimp, chopped
  • 2 Cups Bread Crumbs
  • 1 Egg, beaten
  • 1/2 Cup Parmesan Cheese, grated
  • 2 Tablespoons Lemon Juice
  • 1 Tomato, seeded and diced
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Freshly Ground Black Pepper
  • 4 Tablespoons Butter, melted
  • 6 Haddock Fillets


1. Preheat 1. oven to 375° F. Lightly grease a baking sheet pan.

2. Heat olive oil in a skillet over medium heat. Add celery, green onion and garlic; cook and stir until soft. Remove from heat; stir in shrimp, bread crumbs, egg, Parmesan cheese, lemon juice and tomato. Season with salt and pepper. Mix until well blended.

3. Lay the haddock fillets in the baking pan. Brush with melted butter. Mound the

shrimp mixture onto each fillet. Cover with aluminum foil.

4. Bake for 15 minutes, then remove foil and bake for an additional 10 minutes, until top is browned and fish flakes easily with a fork.
