Skellig Beer Pimento Cheese

This is my grown up version of a childhood favorite.

2 tablespoons pimientos, drained
1/3 cup beer, (I use a light beer)
2 tablespoons shallot, minced
1 1/2 tablespoons Worcestershire sauce
2 cups Kerrygold skellig cheese, grated
3 drops hot sauce, or more to taste
pinch salt
1/2 teaspoon freshly ground black pepper
1/4 cup olive oil mayonnaise

1. In a food processor with shredding blade attachment, shred Skellig cheese. Remove to a small bowl. Replace blade with mixing blade in food processor.
2. In the food processor, add Worcestershire sauce, shallot, hot sauce, mayonnaise, salt and pepper. Add shredded cheese and pimientos. Combine until just blended. Place mixture into large bowl. Gently stir in beer. Place in airtight container and refrigerate. Serve as a dip with vegetables, or as a spread on a sandwich.
